11 Best Plant-Based Sandwiches with Avocado You’ll Find on Pinterest

When you’re following a plant-based diet, then sandwiches + avocado are a couple of your staples. Avocado is like the butter of the plant-based world. And sandwiches… well, everyone loves a good sandwich!

That’s why I decided to head to Pinterest to find some of the best plant-based sandwiches with Avocado I could find. Here are 11 of them, to be exact. (I’m sure there are plenty more, but let’s not get ahead of ourselves!)

These are in no particular order.

This is not the sandwich Oscars, so no sandwich should take offense.



Why Avocados?

I plan to do a series of these types of posts to help you get ideas and inspiration about what to make to eat when you’re on a plant-based diet.

I picked avocados first because honestly, they are loved by just about everyone – plant-based people, keto people, people who are just people. They are also packed with healthy fats and other key nutrients.

Are they the perfect food?

Quite possibly.

Now, let’s get into this list!


1. Smashed Chickpea and Avocado Salad Sandwich

There’s something magical that happens when you combine chickpeas and avocados. Chickpeas are the filling, protein-source, but they can tend to be a little dry. But when you mix it with avocado, the two become a power-packed, delicious and fulfilling sandwich bursting with nutrition.

This sandwich also has another one of my personal favorite ingredients – dill.

With only 8 ingredients (including the bread), this one is easy to whip up at any time.

2. Spicy Vegan Chickpea Wraps with Spinach and Avocado

This one had me at spicy. And once again, we have one of our favorite protein sources – chickpeas. The first recipe had dill, but this one has something even better.

Sriracha.

Sriracha makes everything just a little bit better, doesn’t it?

3. Tabbouleh Hummus Avocado Sandwich

You know what would be great?  Learning how to say Tabbouleh. But what I do know is that it’s delicious. Tabbouleh is a salad made of cracked wheat, parsley, tomatoes, mint, and onion. Of course, there are many variations on this salad.

What I’ve never heard is putting it right inside of a sandwich. I honestly think that’s genius.

This recipe uses chicken broth and provolone cheese, but if you don’t include animal products at all, then you can easily replace the chicken broth with vegetable broth and omit the cheese.

4. Mashed Avocado Quesadillas

What’s a better hot sandwich? A quesadilla or a panini? You’re right. We don’t need to choose. For now, let’s enjoy this mashed avocado quesadilla! This guy has avocado (duh!), black beans AND corn. It’s like the most perfect summer salad, but in a sandwich.

Not only that, but it has one of the most perfect ingredients nature ever created – cilantro. I know some people absolutely hate cilantro. I don’t get it, but you do you.

5. Avocado Pesto Grilled “Cheese”

The avocado pesto grilled “cheese” is a vegan sandwich, so, therefore, there’s not really any cheese. (Which is why cheese is like “cheese”. But I’m pretty sure you get that.) There is vegan cheese in this sandwich, which you can get by the slice in most supermarkets these days.

This is a super simple sandwich that only has 6 ingredients. Whip it up in no time flat and enjoy the simplicity.

6. Mushroom Avocado Toast

You may be thinking, “Does toast count as a sandwich?” Listen. Let’s not split hairs here. We have bread. And we have avocado. Close enough! 🙂

Avocado is already pretty great on its own. But when I saw this recipe, I knew it would be extraordinary. Because mushrooms. Mushrooms, like cilantro, are nature’s gifts from heaven. You can fight me on that if you want.

I also love that this recipe has a bit of vinegar in it. Think mushrooms, vinegar, avocado…it’s a little creamy, a little salty and a little meaty from the ‘shrooms. It’s pretty much perfection on bread.

7. Vegan Avocado Ranch Panini Sandwich

This one had me at ranch.

And just look at that picture in the pin. Really. Just look at it. That’s all I have to say about this one.

8. Everything Bagel Avocado White Bean Sandwich

If there’s one thing we’re obsessed with in my house, it’s Everything Bagels. You know the ones. They literally have everything on them. Sesame seeds, poppy seeds, onions, salt and all kinds of good stuff.

Now, you might be wondering how you make this sandwich into an everything “bagel”. There’s a key secret ingredient in this one.

OK, fiiiinnnne. It’s not actually a secret. It’s just Trader’s Joe’s Everything But the Bagel seasoning. Genius stuff! If you don’t have Trader Joe’s near you, I’ll first shed a tear for you. Then I’ll point you to Abbey Sharp’s blog (where this sandwich recipe is posted) and she will set your straight with her Everything Bagel spice recipe.

9. Smashed White Bean, Basil and Avocado Sandwich

You know how I said above that cilantro is nature’s perfect herb from heaven? Or something like that? Well, I take it back. It’s basil.

And this combination of foods for a sandwich is just perfection. Avocado – of course. White beans. AND basil? Be still my beating heart!

The white beans are used very much like chickpeas in other recipes. You mash them up a bit, then mix with the avocado to make a creamy-protein packed filling. This recipe also includes a bit of dijon mustard to give it a little zing.

10. Smoky Tempeh and Avocado Wrap

If I had to pick one thing to eat for the rest of my life, it might just be this wrap. Have you ever had smokey tempeh? If not, you are truly missing out.

Here’s the thing. Tempeh is weird at first. I think most people think so. I thought so when I first tried it.

But once you try it a few times, I swear you can’t get enough of it. Then you add the smoky flavor to it? It’s seriously the best thing you’ll eat.

This wrap also happens to have a “secret sauce” that sounds absolutely delicious. Kathy Patalsky, you might win the sandwich Oscar. Seriously.

(Oh, who am I kidding? All these sandwiches are winners!)

11. Black Bean and Avocado Wraps

Last, but not least…

We have these Black Bean and Avocado Wraps.

This.

This is everything.

I choose to eat THIS sandwich for the rest of my life.

(I obviously change my mind about this every time I see a new sandwich.)

This one has seasoned black beans, onions, pepper, avocado, and…

Drum roll, please…

Avocado salsa.

Yup. Sign me up for this one!
